Protein Pancake Recipe
A quick, easy and healthy option for protein pancakes from Coach Courtney
My favorite meal of the day is breakfast, hands down. So much so that I almost always eat breakfast twice in one day! These are the perks of waking up at the crack of dawn!
Here is a simple, guilt-free recipe to satisfy that pancake craving:
Taste so good, you won’t even need syrup (but don’t slap yo’ momma)!
Blueberry Protein Pancake Recipe
2 Whole Eggs
1/2 scoop Bluebonnet Vanilla Whey Isolate
1 tbsp PB2
1/4 cup Banana
1/4 cup Gluten Free Rolled Oats
1/4 cup Blueberries
35 g Carbs
32 g Protein
12 g Fat
12 g Sugar
Blend all ingredients together in blender. Pour some of the batter into heated non-stick skillet, cook, then… EAT ALL THE PANCAKES!
Feel free to substitute different fruits to change up the flavor (it’s very good with strawberries instead of blueberries, too!). Maybe even try some unsweetened cocoa powder if you’re about that life. I highly recommend leaving the banana in to keep the sweetness and texture. Could use egg whites to cut back on the fat.
